Grandma Hazel's Pineapple Cheesecake

My Grandma Hazel was big on great food, great sewing and simply great company. One of the recipes that she really loved to make from her quilting bee is this recipe.

Pineapple Cheesecake Supreme
GRAHAM CRACKER CRUST:
3 C. Crushed Graham Crackers(set aside 1/2 cup crushed crumbs to top dessert with)
1/2 cup melted butter
1 teaspoon vanilla
1/4 c. sugar
Mix all of these ingredience together and press into a 9x15 inch pan, set aside.
PINEAPPLE CHEESECAKE FILLING:
2 Cups whipping cream, whipped to stiff peaks -set aside.
1 pkg lemon jello
1 cup boiling water
1 8oz. pkg. cream cheese, softened
1/2 cup sugar
1 cup crushed, drained pineapple.
Disolve jello in boiling water, set aside to cool to a syrupy stage. In a large mixing bowl, mix cream cheese, sugar and vanilla until smooth. Slowly add lemon jello until mixed thoroughly and crushed pineapple. Then gently fold in whipped cream until mixed thorougly. Pour into crumb lined pan and sprinkle with remaining crumbs. Refrigerate overnight.
